Ingredients

1/2 litre water or stock
1/2 tsp salt
10 g curry powder
4 tbsp vegetable oil
1 clove garlic
2 onions
10 g grated root ginger
2 large tomatoes
2 cups peeled and chopped apples
25 g chopped chutney
1 kg stewing lamb

Method

Trim the meat and cut into even pieces.
Put oil in a saucepan on medium heat. Add garlic, onion, chutney, ginger and the apples and cook, stirring for 5 minutes.
Add in the lamb and curry powder cook for 8 minutes.
Add in the stock and tomato puree, cover with a lid and allow to simmer on medium -low heat for 45 minutes until cooked.
Serve!

Notes

Serve over rice with chutney or yogurt for drizzling over top.
