Lamb Curry

This recipe it is flavorful and tender lamb stew. It is simple and delicious.

Ingredients
  

  • 1/2 litre water or stock
  • 1/2 tsp salt
  • 10 g curry powder
  • 4 tbsp vegetable oil
  • 1 clove garlic
  • 2 onions
  • 10 g grated root ginger
  • 2 large tomatoes
  • 2 cups peeled and chopped apples
  • 25 g chopped chutney
  • 1 kg stewing lamb

Method
 

  1. Trim the meat and cut into even pieces.
  2. Put oil in a saucepan on medium heat. Add garlic, onion, chutney, ginger and the apples and cook, stirring for 5 minutes.
  3. Add in the lamb and curry powder cook for 8 minutes.
  4. Add in the stock and tomato puree, cover with a lid and allow to simmer on medium -low heat for 45 minutes until cooked.
  5. Serve!

Notes

Serve over rice with chutney or yogurt for drizzling over top.
