Recipe; How To Cook Oxtail Stew


Oxtail Stew

This is one of the best tried oxtail recipe it is super flavorful. This recipe gives us a rich delicious oxtail.

  • 1 kg oxtail
  • 1 litre brown stock
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 onion (thinly sliced)
  • 25 g tomato puree
  • 100 g carrots
  • 3 tbsp oil
  1. Cut the oxtail into small pieces. Remove excess fat.

  2. Fry on all sides in hot fat.

  3. Place in a casserole.

  4. Add the fried onion and carrot. Mix in the flour.

  5. Add tomato puree, brown stock, garlic and season.

  6. Bring to boil, skim.

  7. Cover with a lid and simmer in the oven till tender for about 2 hours.

  8. Remove the meat from the sauce, place in a clean pan.

  9. Serve sprinkled with chopped parsley.

To thicken gravy, you can add a few slices of potatoes and cook it for a longer time. It thickens up if you cook it longer. If you want you can marinate the oxtail over night.
