Chicken Saute With Mushrooms

Ingredients
  

  • 3 chicken cuts
  • 1/2 tsp salt
  • 1/2 ground pepper
  • 2 tsp butter
  • 2 tsp vegetable oil
  • 100 g button mushroom
  • 60 ml dry white wine
  • 10 g chopped green onion

Method
 

  1. Place butter, vegetable oil add wine in a saucepan on a medium heat until bubbly and hot.
  2. Simmer for 5 minutes.
  3. Season chicken with salt and pepper. Dredge chicken in seasoned flour onto a sheet of wax paper.
  4. Add chicken and cook until lightly browned on both sides and cooked through 3 to 4 minutes. Remove chicken and set aside.
  5. Add the mushrooms for about 5 minutes. Return chicken to the pan and cook until it has heated through, sprinkle with chopped parsley.
  6. Serve immediately.

Notes

To avoid the chicken from drying out as it reheats, simmer the chicken and sauce in a pan covering the pan with a lid.
