Ingredients
  

  • 3 chicken cuts
  • 1/2 tsp salt
  • 1/2 ground pepper
  • 2 tsp butter
  • 2 tsp vegetable oil
  • 100 g button mushroom
  • 60 ml dry white wine
  • 10 g chopped green onion

Instructions
 

  • Place butter, vegetable oil add wine in a saucepan on a medium heat until bubbly and hot.
  • Simmer for 5 minutes.
  • Season chicken with salt and pepper. Dredge chicken in seasoned flour onto a sheet of wax paper.
  • Add chicken and cook until lightly browned on both sides and cooked through 3 to 4 minutes. Remove chicken and set aside.
  • Add the mushrooms for about 5 minutes. Return chicken to the pan and cook until it has heated through, sprinkle with chopped parsley.
  • Serve immediately.

Notes

To avoid the chicken from drying out as it reheats, simmer the chicken and sauce in a pan covering the pan with a lid.
