Mexican bean pot
This Mexican bean recipe is a perfect side dish to serve with tacos. It is easy to make and healthy.

Ingredients
- 1 1/2 cups black beans
- 100 g finely chopped onions
- 2 carrots chopped
- 2 tomatoes diced
- 2 cloves crashed garlic
- 1/2 tsp salt
- 10 g paprika
Instructions
- Soak the beans in cold water for 24 hours. Drain water.
- Place the beans into a saucepan cover with cold water, bring to boil.
- When the beans is three quarter cooked add all the other ingredients besides the sliced avocados.
- Simmer until the beans are cooked and are soft. Season with salt and paprika to taste.
- Sprinkle with chopped chives and garnish with thinly sliced avocados.
- Serve!

The left overs can be stored in the fridge for about 4 days
