This Mexican bean recipe is a perfect side dish to serve with tacos. It is easy to make and healthy.

Ingredients
  

  • 1 1/2 cups black beans
  • 100 g finely chopped onions
  • 2 carrots chopped
  • 2 tomatoes diced
  • 2 cloves crashed garlic
  • 1/2 tsp salt
  • 10 g paprika

Instructions
 

  • Soak the beans in cold water for 24 hours. Drain water.
  • Place the beans into a saucepan cover with cold water, bring to boil.
  • When the beans is three quarter cooked add all the other ingredients besides the sliced avocados.
  • Simmer until the beans are cooked and are soft. Season with salt and paprika to taste.
  • Sprinkle with chopped chives and garnish with thinly sliced avocados.
  • Serve!

Notes

The left overs can be stored in the fridge for about 4 days
