Mexican bean pot

This Mexican bean recipe is a perfect side dish to serve with tacos. It is easy to make and healthy.

Ingredients
  

  • 1 1/2 cups black beans
  • 100 g finely chopped onions
  • 2 carrots chopped
  • 2 tomatoes diced
  • 2 cloves crashed garlic
  • 1/2 tsp salt
  • 10 g paprika

Equipment

  • Saucepan

Method
 

  1. Soak the beans in cold water for 24 hours. Drain water.
  2. Place the beans into a saucepan cover with cold water, bring to boil.
  3. When the beans is three quarter cooked add all the other ingredients besides the sliced avocados.
  4. Simmer until the beans are cooked and are soft. Season with salt and paprika to taste.
  5. Sprinkle with chopped chives and garnish with thinly sliced avocados.
  6. Serve!

Notes

The left overs can be stored in the fridge for about 4 days
