Roast Duck
Roast duck it is simple to make and delicious. This will produce a good crisp skin and a well cooked duck. Roast duck it is so easy to cook.

Ingredients
- 1 duck
- 1/4 litre brown stock
- 2 tsp salt
- 125 ml apple sauce
- 1 tsp pepper
- 1/2 cup melted butter
Instructions
- Preheat oven to 190 degrees.
- Lightly season the duck inside and out side with pepper, salt. Truss and brush the duck lightly with oil.
- Place the duck in the preheated oven.
- Roast the duck for about 40 minutes. Spoon 1/4 cup of melted butter over the duck and cook for 45 minutes. Spoon the remaining butter over the duck and cook for about 15 minutes.
- To taste if cooked, pierce with a fork between the drumstick and thigh and hold over a plate. The juice coming out of the duck should not show any signs of blood.
- Prepare roast gravy with the brown stock and the sediment on the roasting tray. Remove the surface fat.
- Serve!
Notes
The excess fat from the roasting bird you can put in a lunch tin and keep in the fridge and you can reuse it for even when making roast potatoes.
