Poached Eggs With Cheese Sauce And Spinach

Ingredients
- 3 eggs
- 3/4 kg spinach
- 250 ml mornay sauce
- 3 tbsp salted butter
- 1 1/2 cups grated cheese
- 2 tbsp corn starch
Instructions
- Remove the stems from the spinach.
- Wash very carefully in plenty of water several times if necessary.
- Heat oil in a saucepan and add spinach and stir. Cover the pan and cook over medium heat for 3 minutes until the spinach has wilted and is tender. Drain water from the spinach. Return to the pan and season with pepper.
- Place the spinach into a bowl, add butter and loosen with a fork. Spoon the cheese over the spinach.
- Place the eggs on top. Lightly dust with pepper and salt to taste, then place the bowl under the broiler.
- Cook for 4 minutes until lightly browned.
- Serve!
Notes
Cook under a preheated hot grill for 7-8 minutes until the eggs are set. Then serve hot with French bread. Delicious!
