Poached Eggs With Cheese Sauce And Spinach

Ingredients
  

  • 3 eggs
  • 3/4 kg spinach
  • 250 ml mornay sauce
  • 3 tbsp salted butter
  • 1 1/2 cups grated cheese
  • 2 tbsp corn starch

Method
 

  1. Remove the stems from the spinach.
  2. Wash very carefully in plenty of water several times if necessary.
  3. Heat oil in a saucepan and add spinach and stir. Cover the pan and cook over medium heat for 3 minutes until the spinach has wilted and is tender. Drain water from the spinach. Return to the pan and season with pepper.
  4. Place the spinach into a bowl, add butter and loosen with a fork. Spoon the cheese over the spinach.
  5. Place the eggs on top. Lightly dust with pepper and salt to taste, then place the bowl under the broiler.
  6. Cook for 4 minutes until lightly browned.
  7. Serve!

Notes

Cook under a preheated hot grill for 7-8 minutes until the eggs are set. Then serve hot with French bread. Delicious!
