This is a simple, nourishing recipe of cooking tripe. It is one of the Zimbabwean's and South African's favored traditional dish. There are 4 types of tripe which are blanket tripe, honeycomb tripe, book tripe and Reed tripe.
Clean tripe with rock salt and vinegar. Soak tripe in cold water for about 10 minutes, then rinse it and cut it into pieces.
Put the tripe in a large pot of water and boil until tender, for about 2 1/2 to 3 hours. Remove from the pot and set aside.
Add oil to the saucepan and add onion. Saute for about 1 minute and then add pepper, garlic, carrots and tomatoes. Season with salt to taste if necessary.
Simmer for about 5 minutes and put back the tripe. Cook on low for about 10 minutes.
Serve immediately.

Best served with hot pap or rice and vegetables. It is a great meal to make for your family, especially on a chilly day.
