Chicken Pancakes

This is a great recipe which one can use left over chicken. This a great delicious and fabulous dish that kids would love.

Ingredients
  

  • 1/4 litre milk
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 200 g cooked chicken free from bone and skin
  • chopped parsley
  • 1 1/4 cup flour
  • 10 g melted butter

Method
 

  1. Sieve flour into a bowl and make a well in the center.
  2. Add egg, salt, pepper, parsley and milk.
  3. Mix the flour from the sides of the bowl and whisk to make a smooth batter. Mix in the melted butter.
  4. Heat oil in the saucepan. Pour in just under a ladleful of batter. Cook for a few seconds until lightly brown.
  5. Meanwhile prepare the filling by boiling the sauce.
  6. Cut the chicken in neat small pieces and add to the sauce.
  7. Divide the mixture between the pancakes, roll up each one and place in an earthenware dish.
  8. Reheat in a hot oven and serve.

Notes

You can add cheese either as the sauce or in breadcrumb topping.
