Chicken Pancakes

This is a great recipe which one can use left over chicken. This a great delicious and fabulous dish that kids would love.

Ingredients
  

  • 1/4 litre milk
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 200 g cooked chicken free from bone and skin
  • chopped parsley
  • 1 1/4 cup flour
  • 10 g melted butter

Instructions
 

  • Sieve flour into a bowl and make a well in the center.
  • Add egg, salt, pepper, parsley and milk.
  • Mix the flour from the sides of the bowl and whisk to make a smooth batter. Mix in the melted butter.
  • Heat oil in the saucepan. Pour in just under a ladleful of batter. Cook for a few seconds until lightly brown.
  • Meanwhile prepare the filling by boiling the sauce.
  • Cut the chicken in neat small pieces and add to the sauce.
  • Divide the mixture between the pancakes, roll up each one and place in an earthenware dish.
  • Reheat in a hot oven and serve.

Notes

You can add cheese either as the sauce or in breadcrumb topping.
