Wash very carefully in plenty of water several times if necessary.
Heat oil in a saucepan and add spinach and stir. Cover the pan and cook over medium heat for 3 minutes until the spinach has wilted and is tender. Drain water from the spinach. Return to the pan and season with pepper.
Place the spinach into a bowl, add butter and loosen with a fork. Spoon the cheese over the spinach.
Place the eggs on top. Lightly dust with pepper and salt to taste, then place the bowl under the broiler.
Cook for 4 minutes until lightly browned.
Serve!
Notes
Cook under a preheated hot grill for 7-8 minutes until the eggs are set. Then serve hot with French bread. Delicious!
