Chicken Pancakes
This is a great recipe which one can use left over chicken. This a great delicious and fabulous dish that kids would love.

Ingredients
- 1/4 litre milk
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 200 g cooked chicken free from bone and skin
- chopped parsley
- 1 1/4 cup flour
- 10 g melted butter
Instructions
- Sieve flour into a bowl and make a well in the center.
- Add egg, salt, pepper, parsley and milk.
- Mix the flour from the sides of the bowl and whisk to make a smooth batter. Mix in the melted butter.
- Heat oil in the saucepan. Pour in just under a ladleful of batter. Cook for a few seconds until lightly brown.
- Meanwhile prepare the filling by boiling the sauce.
- Cut the chicken in neat small pieces and add to the sauce.
- Divide the mixture between the pancakes, roll up each one and place in an earthenware dish.
- Reheat in a hot oven and serve.
Notes
You can add cheese either as the sauce or in breadcrumb topping.
