Tripe
This is a simple, nourishing recipe of cooking tripe. It is one of the Zimbabwean's and South African's favored traditional dish. There are 4 types of tripe which are blanket tripe, honeycomb tripe, book tripe and Reed tripe.
Equipment
- Saucepan
- Pot
- Knife
- cutting board
- Cooking spoon
- Pressure cooker
Ingredients
- 1 kg ox tripe
- 1/2 cup chopped onion
- 1 tsp salt
- 4 litres water
- 1 tbsp olive oil
- 1 cup crushed tomato
- 1/4 cup pepper
- 1 large carrot
- 1 small clove garlic
Instructions
- Clean tripe with rock salt and vinegar. Soak tripe in cold water for about 10 minutes, then rinse it and cut it into pieces.
- Put the tripe in a large pot of water and boil until tender, for about 2 1/2 to 3 hours. Remove from the pot and set aside.
- Add oil to the saucepan and add onion. Saute for about 1 minute and then add pepper, garlic, carrots and tomatoes. Season with salt to taste if necessary.
- Simmer for about 5 minutes and put back the tripe. Cook on low for about 10 minutes.
- Serve immediately.
Notes
Best served with hot pap or rice and vegetables. It is a great meal to make for your family, especially on a chilly day.
