Doughnuts Recipe: Light as a feather and tasty
Doughnuts Ingredients:
2 cups flour
1/2tsp salt
1and 1/2 tsp instant yeast
2tbs sugar
1egg
1tbsp butter or margarine
About 120ml warm water mixed with milk
(60ml water +60ml milk). That’s about halfcup in total.
Oil to deep fry.
1/4cup sugar mixed with 1/2 tsp cinnamon (optional) for rolling the cooked doughnuts.
Doughnuts RecipeMethod:
1.Mix together all the dry ingredients then make a well in the centre.
2. Add the egg, melted butter/margarine and milk + water mixture then mix thoroughly.
3. On a floured surface knead the dough for a good 15 mins by hand or 5-7 mins in stand mixer. Knead and knead and knead… that’s were the trick of light doughnuts lies. Add a bit of flour if it’s sticky and knead. Sprinkle a tsp of flour at a time as you knead and the dough will become less and less sticky as you knead. Be sure not to add too much flour. If possible check your clock and knead 15 mins until the dough is very smooth and elastic and doesn’t stick on the hands.
4. Make a ball and coat it with 1/2 tsp oil then place in a bowel and cover with plastic wrap or wet dish towel. Put in a warm place.
( I use my oven, switched on 3 mins then off to create a warm environment.) allow dough to rise for about 45 mins then punch it down and knead 1 min to remove all air.
5. Roll flat into 1cm-1.5cm thickness then use a doughnut cutter. You can improvise with a water glass dusted with a little flour. Cut in the centre with a small cap for vinegar bottle, anything small will do. Place them on a baking sheet lined with either wax paper greased and dusted with a little flour or clean thin kitchen towel. Cover them again with a damp kitchen towel and put back in warm oven for about 20 mins when they have risen just a bit, then they are ready to deep fry!

Don’t leave them to rise beyond 20 mins otherwise they’ll be difficult to transfer to the pot, they’ll puff up well in the pot.
6. Deep fry in medium to hot oil. You may use a kebab stick to turn them in the pot or fork.
Drain them on paper towels and toss them in the sugar and cinnamon mixture whilst they are still warm.
You may glaze with melted chocolate, or any other glaze you prefer. Serve with hot chocolate/ coffee or tea.
